Organic Timilia Ziti Tagliati
Timilia wheat (a.k.a. tumminia, timminia, trimminia in Sicilian dialects) has its origins in Sicily, where it was widely cultivated during ancient Greek times, and called trimenaios, meaning wheat with a three-month growing cycle. Ziti's name originates from "i zit" (the spouses). In southern Italy, this thin short pasta is typically served at wedding feasts. We like to dress it with aglio olio e peperoncino or capers and anchovies.
